This edition, published after the original 1988 edition, was reissued in the more uniform format for what has become the Chez Panisse Cookbook Library each featuring David Goines jacket illustrations. In this volume, chef Bertolli (who worked with Alice Waters) presents the Chez Panisse kitchen's explorations and re-examinations of their earlier triumphs. Chock full of the restaurant's legenday recipes as well as informed commentary on food and their unique combination of ingredients, with photographs by Gail Skoff.
